To Take Off, Press A to increase Speed and Numpad 2 to Climb.

Steering is additive. You do not need to hold down a direction to keep going in that direction. Instead, you bank harder and faster the longer you hold down a direction key. Press the opposite direction or Numpad 5 to bring steering back to center.

Overcorrecting is the cause of many deaths. The other major cause of death is letting Speed decrease while climbing or turning in melee. If you keep Speed up, it's possible to dodge Breath Atks right on top of you. (It's also possible to Climb/Dive out of the way.)

Interface HUD:

Breath = Time until Breath Atk1 or Breath Atk2 is ready again

Power = Dragon's ability to Climb at a steep incline. A steep incline will deplete the meter faster. Returning to even flight or Diving will restore regeneration. If Power hits 0, the dragon with say "I need to rest now" and Dive for a few seconds. If you are near the ground ("Low Altitude" or "Very Low Altitude", you can crash. Crashing is instant death.

Speed = How fast your dragon is flying. Bronze and Silver dragons will never be able to fill the meter unless perhaps while diving. Speed always decreases while climbing and increases while diving without using A or S controls.

Altitude Meter = You can Climb far above the range of the meter over time; but once you are within a certain range of the ground, this meter will give you a better sense than sight of how close you are to crashing.

Note on Falling: You can be knocked off your mount and fall to your death if you are too close to the ground when you are dismounted. Your dragon will dive to catch you but may fail to snatch you in time. You will need to be near the top of the Altitude meter or about halfway if you possess the Ring of Featherfall (later quest reward) to avoid death from falling. Approaching enemies from beneath can lead to dismounting. Try to hit enemies with the Lance before collisions occur.

Compass = Always good to check your direction at the beginning of the mission if you want to know where you started and the battleground orientation.

Crystal Ball/Radar = Enemies tend to be colored the same as their name implies. (Red dragons are Red dots.) Breath Atks show in bright colors. Enemies tend to blink when they are ready to use Breath/ranged Atks. You can judge range of Breath Atks and proximity and location of all enemies on the radar. Use to judge when to use own Breath Atks and dodge enemies Breath Atks.
