Anyone know if there is a version or command line switch for monochrome mode? I recall playing the same game on a PC with green screen, that had no colors but higher resolution.

Neat little diversion. Really tough, actually. You'll want to make sure you have DOSBox set to be running at around 200 cycles or it'll be going WAY too fast. Fun for an afternoon :)
