What keeps people playing DOS games is the fact that you don't need a CRAY super computer to play them. There is an endless cycle in the industry between hardware and software. Hardware is improved, so programmers think you have to use every ounce of resources at the high end. So manufacturers improve hardware so that the computer doesn't smoke trying to run the software. Then the programmers, then the manufacturers in a vicious cycle so that only those with a huge budget or really deep pockets can play the latest games. I don't need to be able to cut my wrist on a knife with the graphics. Some of the best graphics are the more primitive. Let's all be thankful for the ingenuity of DOSBox that keeps some games playable.
